The Pecos Pit BBQ Food Truck has roots dating back to 1980 when Ron and Debra Wise opened the original Pecos Pit BBQ in Seattle on 1st Avenue South. They served two essential ingredients to their customers, warm welcomes and smoked meats. Their delicious alder smoked, slow roasted beef and pork soon is now legendary. The habit-forming sandwiches with piles of premium smoked meat and an addicting sauce became wildly acclaimed. That sauce became known as “The Only Sauce” and it was offered three ways: mild, medium or really Hot! What humbly began in an old open-air gas station has evolved into a national chain of BBQ restaurants. Devoted customers have lined up for years to get their Pecos fix.
