As a 17 year old I worked in Italy at a gelato shop. I was washing the fruit, chopping it, mixing with cream, homogenizing, churning. The best part was I could eat as much as I could. But eventually I learned dairy wasn’t good for me and was hurting me. I didn’t eat gelato for a very long time. Sure there were dairy free ice creams but it wasn’t the same.
So 25 years after I stepped into an Italian gelato shop in Rome I started to work on my own dairy free gelato. That’s how the gelato truck came to existence. A small gelato shop in Venice is an extension to that.
